Nadiya's 'Sweet Sunday' Orange & Pistachio French Toast

Attention, brunch lovers! Make your Sunday mornings shine with a burst of citrusy goodness. Get ready to tantalize your taste buds with Nadiya Hussain's sweet Orange & Pistachio French Toast with a luscious orange syrup. It's a breakfast dream come true!

Ingredients

For the syrup:

Juice of 2 large oranges

125ml caster sugar

1 tbsp cornflour

50g cold butter cubed

For the French toast:

8 slices brioche

4 large eggs

50ml whole milk

Zest of 2 large oranges

Pinch salt

25g shelled pistachios, roughly chopped

Knob of butter and vegetable oil for frying

Optional orange segments for serving

Instructions

1Zest and juice the oranges and set zest aside. You need around 125-150ml of juice. Don’t worry if there are bits!

2 In a non-stick saucepan, heat the juice and sugar until sugar has dissolved. Take a couple of tablespoons of juice and in a small bowl mix it with cornflour to a smooth paste.

3 Add the paste back into the saucepan and bring the syrup to boil and then simmer, stirring continuously.

4 Gradually add cubed butter stirring until melted. Strain the syrup through a fine sieve into a jug and set aside to cool.

5 Whisk eggs, milk, orange zest and pinch of salt together in a shallow container.

6 Heat knob of butter and vegetable oil in griddle pan over a medium high heat.

7 Soak 1-2 pieces of brioche in egg mixture, flipping so both sides soak up some liquid.

8 Fry the brioche in Nadiya's cast iron griddle pan for a few minutes each side until golden brown. If the griddle gets too hot, turn the heat down a little to cook bread all the way through. Leave to cool and repeat with all bread.

9 Serve French toast with orange segments, a generous drizzle of orange syrup and a sprinkling of chopped pistachios. Use any leftover syrup on ice-cream, yoghurt or porridge!
