- Melt chocolate pieces, butter, and golden syrup in a heat proof bowl over simmering water. Make sure the base of the bowl is not touching the water.
- Break up the biscuits into small pieces and add alongside marshmallows, dried cherries, and almonds once chocolate, butter and syrup are completely melted and mix coating everything in chocolate.
- Add pinch of sea salt and mix through.
- Pour mix into a 13" x 7" shallow brownie tin lined with baking parchment and spread evenly
- Leave to set in the fridge for a couple of hours.
- Lift the rocky road out and dust with icing sugar to serve.
