- Zest and juice the oranges and set zest aside. You need around 125-150ml of juice. Don’t worry if there are bits!
- In a non-stick saucepan, heat the juice and sugar until sugar has dissolved. Take a couple of tablespoons of juice and in a small bowl mix it with cornflour to a smooth paste.
- Add the paste back into the saucepan and bring the syrup to boil and then simmer, stirring continuously.
- Gradually add cubed butter stirring until melted. Strain the syrup through a fine sieve into a jug and set aside to cool.
- Whisk eggs, milk, orange zest and pinch of salt together in a shallow container.
- Heat knob of butter and vegetable oil in griddle pan over a medium high heat.
- Soak 1-2 pieces of brioche in egg mixture, flipping so both sides soak up some liquid.
- Fry the brioche in Nadiya's cast iron griddle pan for a few minutes each side until golden brown. If the griddle gets too hot, turn the heat down a little to cook bread all the way through. Leave to cool and repeat with all bread.
- Serve French toast with orange segments, a generous drizzle of orange syrup and a sprinkling of chopped pistachios. Use any leftover syrup on ice-cream, yoghurt or porridge!
