- Blend the avocado and condensed milk until no avocado chunks remain. Pour the mixture into a large bowl
- In a separate mixing bowl add the cold heavy cream. Whip at high speed with a wire whisk until the cream has peaks when you lift out the whisk. (You may wish to use an electric whisk)
- Add 1/3 of the cream to the avocado bowl and gently fold in until no white streaks remain. Careful not to over-mix as you want to maintain the air that was whisked into the cream
- Repeat with another 1/3 of the cream then again with the final 1/3
- Pour mixture into a 9 x 5 inch loaf tin (or similar) and freeze overnight until sold.
